My name is Christine Hale. After completing the work for my Bachelor of arts degree at Shepherd and WVU I went to culinary school in Pittsburgh and attended short courses at Cordon Bleu in Paris and La Varenne in the country side of France,as well as going through the culinary management training program at the Grand Hyatt in Washington D.C...
I suppose it would be fair to say that my techniques are rooted in the French but not limited to that style. I take an eclectic approach to my multi-course dinners at Hillbrook Inn (where I have been the Executive Chef since 1991) . I borrow flavors from all over the world when creating the menus at the inn and I try to incorporate local ingredients when they are available. Being a native West Virginian I also love to introduce my guests to West Virginia regional foods like ramps and morel mushrooms when they are in season. I suppose to put it in a nut shell I strive for simple elegance. I start with quality ingredients and let them speak for themselves.
