Chef Paco has trained under two of the world’s most highly regarded Certified Master Chefs; Chef Fritz Gitschner of the Houston Country Club and Chef Hartmut Handke of Handke’s Cuisine.

Chef Francisco (Paco) Aceves is one of the newest members of the West Virginia culinary community. As the Executive Chef of Stillwaters Restaurant at Stonewall Resort, he is captivating resort guests with his respect for classic cooking techniques intertwined with a flare of modern style. Chef Paco considers working in at this picturesque retreat a wonderful privilege; everyday his workplace is one that is “far from ordinary.”
As a graduate of The Culinary Institute of America, Chef Paco has trained under two of the worlds most highly regarded Certified Master Chefs; Chef Fritz Gitschner of the Houston Country Club and Chef Hartmut Handke of Handke’s Cuisine. During his employment at the Houston Country Club, Chef Paco was chosen to assist in the representation of the United States at one of the most distinguished culinary competitions, the Bocuse d’Or in Lyon, France.

After growing up in Albuquerque, NM, Chef Paco was brought back to his roots in 2005 when he accepted the position of Executive Banquet Chef at La Posada de Santa Fe Resort and Spa in Santa Fe, NM. As a leader at this AAA Four Diamond resort, Chef Paco contributed his skills and knowledge to a 4 million dollar food and beverage venue.

Through his many years of training and travel, Chef Paco’s experiences have given him a wealth of knowledge in regional cuisine and global influence. He believes that there are no shortcuts when it comes to preparation and food products should be treated with the highest respect. His demand for fresh ingredients combined with a palate for bold flavors is what is bringing Chef Paco’s talent to the forefront of modern American cuisine.
