At Provence Market I always find it interesting
that people eat with their eyes--first. That is why I believe
it is so important that food be a work of art—as it combines
flavors, colors, textures and overall arrangement. And just as
in art, each of the components is not nearly as interesting as
the whole—the combination of complex tastes and textures
that tease the palette. So each ingredient has to have a purpose
for being there.
My grandmother and sister are both artists.
They create magic with a paintbrush…. I create my art in
the kitchen.
Someone recently asked me: “If you
were a food, what would you be?”. After I thought about
it I determined that I would be cheese, sometimes sweet, sometimes
salty, sometimes savory...but always good with a glass of wine.
